Real Food Recipes - Fried Rice

1/4 c. expeller-expressed, extra virgin olive oil
3 eggs, beaten
4 cups cooked Soft and Savory Brown Rice (get recipe here)
5 green onions, chopped
2 cloves garlic, minced
1/2 c. frozen peas and carrot mix
1/4 c. chipped fresh parsley
2 T. toasted sesame oil
1 T. soy sauce
1 t. real sea salt or Redmond Real salt
1/2 t. freshly ground black pepper
Directions: Preheat 1 T. of the olive oil in a large skillet. Add eggs and scramble. Transfer eggs to a plate and set aside. Add the remaining oil to hot skillet; add cooked rice. Cook and stir until golden and hot. Add green onion and garlic; cook and stir for 1 minute. Add pea mix, parsley, sesame oil and soy sauce. Cook and stir about 2 minutes or until peas are bright green and hot. Stir in scrambled eggs, salt and pepper. Heat through. Makes 4 servings.
