Salad DressingPlace all ingredients in a 1-quart jar. Cap jar securely and shake to blend ingredients. Refrigerate until time to serve.
1 c. high-oleic, cold-pressed safflower oil - this is mostly mono-unsaturated (Spectrum Naturals is good)
2/3 c. agave nectar (Wholesome Raw Organic Blue Agave is good)
1/3 c. raw apple cider vinegar (Whole Foods
brand is good)
1 t. dry mustard
1 1/2 t. poppy seeds
1/2 t. salt
1/4 t. pepper
Assemble salad. Add salad dressing as desired and toss.

crumbled feta cheese or other, grated cheese sprinkling of crushed dried basil
